Ingredients
  

  • 2 lb pasture raised chicken breast pounded thin
  • 3 pasture raised eggs
  • 1 cup cassava flour
  • 1 tsp dried Italian seasoning
  • 2 cups millet breadcrumbs
  • 1/2 tbsp fresh parsley

Instructions
 

  • Blend millet flakes in a food processor, along with the garlic, parsley and Italian seasoning in a shallow bowl. Season with salt and pepper and mix everything.
  • In another medium bowl, whisk together the 3 pasture-raised eggs, and season with a pinch of salt and 1 tsp of water until combined.
  • Pour the cassava flour into another nowl and season with salt and pepper mix to combine.
  • season each piece of chicken on both sides with salt and pepper and garlic powder to your liking.
  • Set up your breading station. chickenis on the far left, then flour, whisked eggs, millet flakes and then a pan to hold the breaded chicken.
  • Take the chicken and dip it into the flour to coat all sides. Then dip it in the egg mixture and let the excess drip off.
  • Transfer the chicken to the millet flakes, press it down and coat. Place the chicken on a plate and repeat with the remainder pieces
  • Cover a skillet pan with the a descent amount of extra virgin olive oil over medium high heat and place 1-3 chicken breasts at a time. Do not overcrowd.
