Ingredients
  

  • 3-4 lb grass-fed chuck roast
  • 2 tsp avocado oil
  • 2 cups grass fed bone broth (homemade preferred)
  • 2 onions, quartered
  • 4 carrots, chunked
  • 4 celery stalks, chunked
  • 6 garlic cloves, whole
  • 3 tsp apple cider vinegar with the mother
  • 2 bay leaves
  • 1 tsp fresh thyme
  • Sea salt and black pepper to taste

Instructions
 

  • Bring roast to room temperature (about 30 minutes)
  • Season generously with sea salt and black pepper
  • Heat avocado oil in a Dutch oven over medium-high heat
  • Sear roast on all sides until deeply browned (3-4 minutes per side)
  • Remove roast and set aside
  • In the same pot, sauté vegetables until softened
  • Add garlic and herbs, cook until fragrant
  • Return roast to pot
  • Add bone broth and apple cider vinegar
  • Bring to simmer, cover, and transfer to 325°F oven
  • Cook for 2.5-3 hours until fork-tender
