6 Quart Enameled Cast Iron Dutch Oven with Lid
Ingredients

grass-fed chuck roast

tsp
avocado oil
2
cups
grass fed bone broth (homemade preferred)
2
onions, quartered
4
carrots, chunked
4
celery stalks, chunked
6
garlic cloves, whole
3
tsp
apple cider vinegar with the mother
2
bay leaves
1
tsp
fresh thyme
Sea salt and black pepper to taste
Instructions
Bring roast to room temperature (about 30 minutes)
Season generously with sea salt and black pepper
Heat avocado oil in a Dutch oven over medium-high heat
Sear roast on all sides until deeply browned (3-4 minutes per side)
Remove roast and set aside
In the same pot, sauté vegetables until softened
Add garlic and herbs, cook until fragrant
Return roast to pot
Add bone broth and apple cider vinegar
Bring to simmer, cover, and transfer to 325°F oven
Cook for 2.5-3 hours until fork-tender
